Fruit is sourced from vineyards across a range of mesoclimes, a spectrum of flavour profiles to maintain continuity of style. The majority of sites are trained to vertical shoot position, special care is taken to maintain vine health, clean fruit and balance. Parcels are harvested over several weeks at varying levels of ripeness. Fruit is crushed, pressed and cold settled before being racked clean off lees for vinification.
